The FIVE CLIMATES range of single cultivar wines are distinct regional wines, blended artfully from five different climatic areas in the renowned Paarl wine region. The style is marked by the sunshine & maritime influence of the nearby ocean that results in fresh, fruit-driven wines that are popular with a broad target audience.
This soft, elegant Shiraz shows layers of sweet blackcurrant fruit with a pronounced black pepper finish on the palate. An elegant wine with typical Shiraz flavours.
Vineyards are situated in the prime Paarl and surrounding area with varying climatic zones from where grapes can be masterfully selected for our Five Climates range. The grapes were selected from different climatic zones around Paardeberg /Paarl and the cooler coastal area of Philadelphia. The cooler southern slopes of the Philadelphia area ensure a spicy character while the northern slopes of the Paardeberg area contribute berry-fruit characters. The grapes from the shale soil had longer hanging time before reaching physiological pip and skin ripeness. Temperatures of these soils are cooler due to higher clay content and therefore contribute an abundance of blackcurrant and berry fruit flavours.
The grapes were harvested at approximately 24 to 25 degrees Balling followed by de-stemming and cold-soaking for 24 hours. Fermentation started naturally after which commercial yeast was added. Alcoholic fermentation lasted for fourteen days. After fermentation, the wine was left on the skins for an extended period of one week, to ensure a softening of the phenolic compounds resulting in an elegant smoothness on the palate. Further maturation took place on staves and in older French oak barrels for a period of twelve to fifteen months.
